Leafy greens are packed with nutrients, but their strong flavors can take some getting used to. Learn how to choose, prep, and cook greens so you look forward to eating them.

Many people know that leafy greens are “good for you,” but let’s be honest—how often do you actually reach for them? The unique flavor and texture of greens like kale can be off-putting. And that can leave you tempted to skip them altogether.

The good news? There are so many leafy greens to choose from, you’re bound to find some that work for you. And with simple tips for choosing and preparing greens, you can stop avoiding and start enjoying them. Whether tossed in fresh salads or sautéed to perfection, these vibrant veggies can be a tasty way to boost your health.

Why you should eat more leafy greens

If you’ve ever wondered how to eat more vegetables, adding leafy greens to your daily meal plan is a great place to start. Leafy greens are packed with nutrients that support your health. Vegetables like kale, spinach, and romaine lettuce are rich in vitamins A, C, E, and K.

In fact, leafy greens are one of the best sources of vitamin K. This vitamin helps support healthy bones and blood clotting. Since vitamin K is fat-soluble, pairing your greens with a healthy fat like olive oil or avocado can help you absorb it.

Leafy greens are also a great source of minerals like iron, magnesium, [potassium](https://blog.silverandfit.com/tag/nutrition/potassium), and calcium. Many people fall short of getting enough of these nutrients. Eating greens can help fill that gap. Plus, like other vegetables, leafy greens are a good source of fiber—a key nutrient for gut health.

With all those key nutrients, it’s no surprise that leafy greens are a core food of the [MIND diet](https://blog.silverandfit.com/tag/nutrition/mind-diet). This diet is designed to boost brain health and calls for at least 6 servings of leafy greens per week. So, if you aim to eat one serving of leafy greens every day, you’ll be making a positive impact on the health of your body and your brain. However, there are compounds in leafy greens that you may need to limit if you have certain health conditions, such as chronic kidney disease or kidney stones. If you have these conditions or are unsure of your nutritional needs, talk with your doctor before increasing your intake of leafy greens.

As a general rule, the darker the green, the more nutrients it has. For instance, kale is richer in many nutrients than romaine, and romaine is richer than iceberg lettuce. But it’s best not to get too wrapped up in those details. All leafy greens have nutrients your body needs, especially vitamin K. The important part is that you’re eating a variety of greens and eating them often.

How to make greens taste better

Spinach and kale have gotten a lot of attention for being some of the most nutritious foods out there. And it’s true! These dark leafy greens pack a big nutritional punch. But even if other greens may have a bit less of some vitamins or minerals, they are still good for you. The best leafy greens for you are the ones you will actually eat.

If kale (or spinach) is not your favorite, some other leafy greens you can try include:

- Arugula
- Beet greens
- Bok choy
- Collard greens
- Dandelion greens
- Kohlrabi greens
- Mustard greens
- Radish greens
- Romaine lettuce
- Swiss chard
- Turnip greens
- Radicchio

And if you’re not (yet) a fan of the bitter or earthy flavors of dark leafy greens, try these tips to make them more enjoyable:

- Start with milder greens.

Baby greens and microgreens are picked before the plant is mature. They are milder and more tender than the adult version, making them easier to enjoy. Other mild greens include romaine, butter lettuce, spring mix, and Swiss chard. If you start with these, you may eventually start to like the flavors of heartier greens.
- Make kale more appealing.
Kale can be a tough one—literally. Many people can’t get past its bitter flavor and tough texture. But there are ways of making it easier to eat.

**Prepare it:** To make kale more appetizing, remove the tough stems before eating. (The stem is edible, but most people find it unpleasant.) Chop or tear your kale leaves, *then* wash them. When you break the leaves, they release the bitter flavor that kale is known for. Washing the leaves after you cut them helps rinse away some of that bitterness.

**Massage it:** For a fresh kale salad, massage the kale leaves after washing and drying them. This simply means squeezing the kale in your hands to help break down the fibers. Using a vinaigrette while you massage your kale helps to tenderize the leaves. To do this, add your prepared kale to a bowl and top with your favorite vinaigrette. (Make your own for the healthiest version.) With clean hands, squeeze the kale several times until it’s as tender as you like.

**Cook it:** If raw kale is still not your thing, or if you just want more kale options, try cooking it. This will do even more to soften kale’s texture and flavor. Plus, if you have any concerns about germs on your greens, know that cooking it helps kill off bacteria and parasites. Prepare the kale by pulling the leaves off the stem, chopping it, and washing it. Then, cook it! You can add it to soups, roast it with other hearty vegetables, or sauté it with a little olive oil, lemon juice, and salt.
- Balance bitterness with flavor boosters.
Instead of trying to get rid of the bitterness, try pairing greens with toppings that round out the flavor. A splash of lemon juice, vinegar, salsa, or a tangy vinaigrette can add acidity and freshness. Healthy fats like olive oil, avocado, nuts, seeds, or a sprinkle of cheese can help mellow stronger flavors. You can also add a touch of savoriness with roasted vegetables, garlic, herbs, and spices. Or go the sweet route with fresh or dried fruit and warm spices like cinnamon or nutmeg.![ Fresh salad made with leafy greens and vegetables, served in a bowl alongside an assortment of healthy produce and whole foods.](https://blog.silverandfit.com/hs-fs/hubfs/SF%20Blog/Article%20Images/Blog%20224%20-%20Leafy-Greens/Nutrition_Fresh%20salad%20with%20leafy%20greens.png?width=510&height=288&name=Nutrition_Fresh%20salad%20with%20leafy%20greens.png)

Eat healthy greens at any meal

Don’t think of leafy greens as just a side dish for lunch or dinner. They can fit into almost any meal:

- Breakfast: Add spinach or other healthy greens to scrambled eggs, omelets, breakfast wraps, or smoothies.
- Lunch: Build salads with a mix of mild and hearty greens, add greens to sandwiches or wraps, or stir them into soup.
- Dinner: Sauté greens as a side, add them to pasta or lasagna, fold them into grain bowls, or stir-fry them.
- Snacks: Make kale chips, blend a green smoothie, or make [energy bites that sneak in leafy greens](https://kccg.org/wp-content/uploads/2025/07/Hidden-Spinach-Energy-Bites-Recipe-Card.pdf).

If you enjoy salads full of healthy greens and other veggies, keep eating them! But don’t forget there are so many more ways to enjoy leafy greens. Adding even a little bit to different meals can make it easier to hit your daily goals.

![Washing fresh kale under running water as part of healthy meal preparation, with assorted vegetables and leafy greens nearby.](https://blog.silverandfit.com/hs-fs/hubfs/SF%20Blog/Article%20Images/Blog%20224%20-%20Leafy-Greens/Nutrition_Washing%20fresh%20kale.png?width=510&height=288&name=Nutrition_Washing%20fresh%20kale.png)

Simple habit-building tips

Changing your diet can feel overwhelming. To make it easier, don’t overhaul your diet all at once. Just make small changes, one at a time.

Follow these simple tips to add more leafy greens to your daily food plan:

- Keep washed greens ready to use. To wash your veggies, all you need is cool running water and clean hands. If you have a head of lettuce, first throw away the outer leaves and any damaged ones. Then, rinse the greens thoroughly under cool running water. Rub them gently with your hands to help remove dirt and germs.
- Add a handful of leafy greens to one meal per day. This small change can help you make eating greens a regular habit.
- Mix greens into meals you already eat regularly. It’s a simple way to build the habit without changing your routine too much.

You don't need to be a fan of kale to enjoy the amazing health benefits of leafy greens! Incorporating more vegetables, especially leafy ones, into your diet is a great way to boost your health and well-being. This week, why not pick one new leafy green to try? Add it to at least one meal. Then keep exploring different greens until you find your favorites.
